In 2014 the Ministry of Agriculture approved the regulation on the control of the traceability and transparency in the production of Ibérico ham. The Ibérico Ham Seals guarantee the quality and authenticity of the parts.

"It ensures that the part is effectively Ibérico pork and indicates the type of feed and rearing that the pig has had, as well as its breed"

The regulation identifies four categories of Ibérico pork and differentiates them using four seals, located on the hoof of the hams. 

Ibérico ham seals

Black seal:

This seal identifies the 100% Ibérico Acorn-fed Ham. It certifies that the breed of the mother and father of the pig in question is 100% Ibérico. The animal, in its fattening stage, is fed on acorns and other natural resources of the oak forest.

Red seal:

This seal identifies Ibérico Acorn-fed Ham. It comes from animals that are 75% or 50% Ibérico breed. In its fattening stage the animal was fed with acorns and other natural resources of the oak forest.

Green seal:

This seal identifies Cebo de Campo Ham. It comes from animals that are 100%, 75% or 50% Ibérico breed. These animals are reared in the field and fed with grain, essentially based on cereals and pulses, and natural resources in the countryside.

White seal:

This seal identifies the Ibérico Cebo Ham. It comes from animals that are 100%, 75% or 50% Ibérico breed, fed on farms (not outdoors) using grain.
